Introduction

Ingredients

Directions

Put beef,peas, potatoes, diced onions, carrot into the slow cooker. Fry dry ingredients on very low heat with one tbsp olive oil for approx. 5 mins, add coconut milk. Stir together and pour over the beef and vegies, stir and leave it to cook on low max 8 hrs. Serve with rice.
Serves 6-8

  • I just used 3 tsp Keens curry powder & excluded coriander and cumin as I had none -it was mild but still yummy. Would be nice with chicken or prawns. I used 2*270g tins of light coconut milk and cooked on high from lunch time. I served with Couscous for a quick prep after exercise. - 1/22/09
