Number of Servings: 4

Ingredients

    10 Fresh Rocket Leaves
    1 Cup shredded iceberg lettuce
    1 large scallion cut into thin rings
    2 ripe tomatoes, sliced into 10ths
    Cucumber (4"long) peeled and sliced thinly
    Half a cup of mixed bell peppers
    2 tbsp Olive Oil
    1 tsp Italian Herbs, dried
    1 tsp Black Pepper
    Sprinkle of salt

Directions

In a large salad bowl add the sliced scallions, olive oil, salt, pepper and Italian herbs.
Stir really well.
Add the Rocket and lettuce, gently stir. Then add remaining ingredients stirring after each addition.
Leave at room temperature before serving.
