Quick, creamy, and delicious. Comforting and easy at the end of a long day. Even my boyfriend who doesn't like soup said he could eat this once a week. Quick, creamy, and delicious. Ingredients

1 teaspoon of olive oil
1 garlic clove, minced
1 teaspoon curry powder
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried mint flakes
1 (10 ounce) package frozen peas
1 celery rib, finely chopped
1/2 nonfat evaporated milk
1 cup low sodium chicken broth
fresh mint to garnish
Directions
Put 1 teaspoon of olive oil into saucepan over medium low heat. Add celery and garlic and cook until softened, stirring often.
Add broth, curry powder, salt, pepper and mint and bring to a boil.
Stir in peas. Return to a boil. Reduce heat; cover and simmer for 6-8 minutes or until peas are tender. Cool slightly.
Place pea mixture and milk in a blender or food processor; cover and process until smooth.
Return to saucepan and heat through (do not boil). Garnish with fresh mint if desired
