4.5 cups Healthy Harvest Pasta - Penne or Rotini 3 cups Meatless spaghetti sauce 6 links Extra hot Italian sausage - reduced fat 1 cup fresh sliced mushrooms .5 cup sliced green pepper 1 clove garlic minced 1 small onion chopped 1 cup shredded cheddar cheese
Cook sausage, let cool and slice into bite size pieces. Cook broccoli according to package instructions. Cook pasta according to package instructions, and drain. Saute mushrooms, garlic, onion & peppers until tender. Add sauce to vegetables & heat to a simmer, adding seasonings to taste. Add sausage & broccoli to sauce & veggies. Spray bottom on 9x13 pan with cooking spray. Place half of pasta in bottom of pan, cover with half the sauce mixture, sprinkle with half cup cheddar. Cover with remaining pasta, sauce then cheese. Bake in 350 degree oven for 20-30 minutes until cheese is melted.
