Baked Potatoes With Traditional FillingsSubmitted by: CHERYLAU
400 g Potato (Washed)
2 Garlic Cloves (Crushed)
70 g Bacon
250 g Corn Kernels
100 g Button Mushroom
330 mL Sour Cream
1 cup Tasty Cheese (Grated)
1Â½ tbsp Butter
Â½ cup Fresh Parsley (Chopped)
â€¢ Scrub potatoes until clean.
â€¢ Pierce a couple of times with a sharp knife and microwave for 10 minutes or boil in steamer.
â€¢ Spray with cooking spray and place into oven, turning regularly during the 45 min cooking time to endure brown on all sides.
â€¢ Slice bacon, mushrooms, onion and garlic clove and pan fry over medium heat until cooked. Set aside and keep warm.
â€¢ When potatoes are done, slice a 'lid' off the top and scoop out the centers.
â€¢ Mash lightly with butter and place half back inside.
â€¢ Top with a few spoonfuls of the bacon / vegetable mix including corn.
â€¢ Top with grated cheese, a dollop of sour cream and chopped parsley to serve
