Baked Potatoes With Traditional Fillings

Ingredients

400 g Potato (Washed)
2 Garlic Cloves (Crushed)
70 g Bacon
250 g Corn Kernels
100 g Button Mushroom
330 mL Sour Cream
1 cup Tasty Cheese (Grated)
1½ tbsp Butter
½ cup Fresh Parsley (Chopped)
Directions
• Preheat oven to 180C.
• Scrub potatoes until clean.
• Pierce a couple of times with a sharp knife and microwave for 10 minutes or boil in steamer.
• Spray with cooking spray and place into oven, turning regularly during the 45 min cooking time to endure brown on all sides.
• Slice bacon, mushrooms, onion and garlic clove and pan fry over medium heat until cooked. Set aside and keep warm.
• When potatoes are done, slice a 'lid' off the top and scoop out the centers.
• Mash lightly with butter and place half back inside.
• Top with a few spoonfuls of the bacon / vegetable mix including corn.
• Top with grated cheese, a dollop of sour cream and chopped parsley to serve
