Pumpkin Loaf

Introduction

This recipe is adapted from one of my favourite recipes, but it's a healthier version! This recipe is adapted from one of my favourite recipes, but it's a healthier version!
Number of Servings: 1

Ingredients

    1/2 can Pumpkin puree
    1/2 cup Vegetable oil
    1 egg
    1/4 cup Unsweetened applesauce
    1 3/4 cup Stone-ground whole wheat pastry flour
    1 cup Splenda
    1 tsp Baking soda
    1/2 tsp Baking powder
    3/4 tsp Salt
    3/4 tsp each of Ground allspice, nutmeg and cinnamon
    1/4 cup Walnuts, chopped (optional)

Directions

1. Preheat oven to 350F. Grease a 9x5 loaf pan
2. Combine pumpkin, oil, egg, and apple sauce. Sift together dry ingredients. Combine the two mixtures, blending thoroughly.
3. Pour into the loaf pan and bake for 1 hour.
