Introductionserve on rice or tortillas serve on rice or tortillas
2 lbs Chicken, cubed and cooked
4 tbsp Salsa
4 tbsp honey
2 tbsp sesame oil
2 tbsp soy sauce
2 tbsp vinegar
3 green onions, minced
1/2 c. creamy peanut butter
1 cucumber, diced
4 tomatoes, diced
diced mushrooms (optional)
thinly sliced lettuce
Blend everything except tomatoes, cucumbers, and any other veggies you want to add.
Add warm cooked chicken to sauce and blend. Add tomatoes, cucumbers, and mushrooms and blend. serve warm over rice, or on tortilla with shredded lettuce. Makes approximately 8 1-cup servings. Makes great leftovers, warmed or cold (like a salad), but I would leave out the mushrooms.
