Balsamic Mango Chicken

Introduction

This dish is a little sweet, a little sour and just tastes of summer! Could easily be served as lunch, entree, or main course. Would also be good with fish. This dish is a little sweet, a little sour and just tastes of summer! Could easily be served as lunch, entree, or main course. Would also be good with fish.

Ingredients

    3 boneless, skinless chicken breasts-cut in strips
    1 large mango, peeled, pitted, & sliced
    1 tsp ginger, grated
    1 small onion, minced
    2 tbsp balsamic vinegar
    1 cup OJ (I use light)
    Lemon Juice

Directions

Mix together mango and ginger, set aside. Brown chicken strips, remove from heat and set aside. Combine onion, orange juice, and balsamic vinegar in a pan and reduce by half. Set aside. Arrange mango on plates. Squeeze lemon juce over mango and top with chicken. Pour balsamic glaze over top and serve.
