Brown Rice Bake

Introduction

A vegetarian meal for breakfast, lunch or dinner. A vegetarian meal for breakfast, lunch or dinner.
Number of Servings: 4

Ingredients

    Cook & cut 1 cup of asparagus
    cook & cut 1 cup of spinach
    cook & cut sm. pkg. of mushrooms
    cook 1 cup of brown rice
    scramble 2 large eggs with 1/2 - 1 cup of milk
    mix all things together and pour into a glass baking dish 8 X 6 sprayed with Pam

Directions

Cook for 30 minutes then sprinkle the low fat cheese on top. Cook about 10 more minutes until cheese is brown. Enjoy!
