Spinach Lasagna

Introduction

Made with whole wheat pasta and skim ingredients, this veggie lasagna is a less than sinful indulgence every once in awhile. Made with whole wheat pasta and skim ingredients, this veggie lasagna is a less than sinful indulgence every once in awhile.
Number of Servings: 9

Ingredients

    1 Tbl olive oil
    10 oz frozen chopped spinach, drained
    1 tsp dried oregano
    1 tsp dried basil
    2 cloves garlic, crushed
    1 32 oz jar spaghetti sauce
    1 cup water
    1 cup skim ricotta
    1 cup non-fat cottage cheese
    8 oz part skim mozzarella, shredded
    1/4 cup Parmesan, grated
    1/2 cup parsley, chopped
    1 tsp salt
    1 tsp black pepper
    2 egg whites
    8 ounces whole wheat lasagna noodles

Directions

1. Preheat oven to 350 degrees F.
2. Parboil noodles for 3-4 minutes.
3. In a large pan over medium heat, saute onion and garlic in olive oil. Add spinach, oregano and basil to heat through.
4. Pour in spaghetti sauce and water. Simmer for 20 minutes.
5. Reserve 1/4 cup of a Parmesan/mozzarella mixture to sprinkle on top. With the rest: In a bowl, mix cottage cheese, mozzarella, Parmesan, parsley, salt, pepper and egg.
6. Assemble: Place a small amount of sauce in bottom of 9 x 13" pan. Begin layering in this order: noodles, sauce, cheese mixture. End with sauce.
7. Cover with foil and bake in a preheated 350 degree oven for 55 minutes. Remove foil, top with cheese and bake another 15 minutes. Let sit 10 minutes before serving.
