faux fried rice

Ingredients

    1 cup cooked brown rice
    2 cups zucchini (cubed or sliced)
    1 block of extra firm tofu (cubed)
    1 cup onion (diced)
    1 egg
    1 tbsp thai chili sauce
    1 tbsp canola oil
    1 tbsp rice wine/rice wine vinegar
    1 egg

Directions

saute the onion in oil until clear. add zucchini and tofu. cook 5 minutes. add rice and soy sauce, chili paste and rice wine vinegar. stir well, make an opening in the middle of the pan and add the egg. after one minute integrate it with the rest of the food. cook it thoroughly.
