My Toastadas

Number of Servings: 8

Ingredients

    8 corn tortillas
    1 (16oz) can Refried beans with green chilies
    1 1/2 lb. ground beef
    1 (10oz) can Enchilada Sauce
    2 cups shredded lettuce
    1 (15oz) can Black Beans, drained and rinsed
    1/2 cup frozen Corn, thawed and drained
    1/2 cup diced red onion
    1 cup Schwan's Fruit and Veggie Salsa
    20 Black olives

Directions

Lay corn tortillas out on a cookie sheet and spritz with cooking spray. Bake until crispy. Meanwhile brown, drain, and rinse meat. Mix fruit & veggie salsa with corn, black beans, and red onion. Warm refried beans in microwave, spread on crispy tortilla. Layer beef, enchilada sauce, lettuce, and salsa mixture on top. Top with shredded cheese, sour cream, &/or guacamole (not included in nutrional info)
