Shrimp with Zucchini & Mushrooms

Introduction

This meal goes together quickly using pre-cooked shrimp, and is also yummy over pasta This meal goes together quickly using pre-cooked shrimp, and is also yummy over pasta
Number of Servings: 2

Ingredients

    15 medium shrimp
    1/2 cup, chopped onion
    4 cloves garlic
    2 medium zucchini
    1/2 cup, pieces or slices fresh mushrooms
    1/4 cup, grated Parmesan cheese
    2 tablespoons olive oil or cooking spray instead.

Directions

1. Heat olive oil in fry pan.
2. Add chopped onion and minced garlic cloves. Cook until softened.
3. Peel zucchini and slice lengthwise, then slice into 1/4" slices. Add to onion and garlic mixture. Cook until tender-crisp.
4. Add sliced mushrooms and cook until soft. Then add thawed cooked shrimp. Heat only until shrimp is hot.
5. Top with cheese and serve with green salad.
