Introduction

A light summery tomato salad. A light summery tomato salad.
Number of Servings: 2

Ingredients

    Tomato, 1 large
    mushrooms, 2 large
    parsley, chopped finely - 2 tablespoons
    onion, chopped finely - 1 tablespoon
    Scallion or garlic greens, chopped finely - 1 teaspoon
    Olive oil - 1-2 Tablespoons
    Vinegar - 1 Tablespoon
    Basil - 1/2 T dried - or use fresh!
    salt and pepper = a few dashes each

Directions

Chop tomato and mushrooms into small cubes.
Finely chop onion, garlic greens, and parsley.
Combine in bowl with olive oil, vinegar, basil, salt and pepper.
Serve atop mixed salad greens.
