Ingredients

1 cup water
1/2 cup pumpkin pie mix (or pumpkin puree with 1/4 teaspoon of pumpkin pie spice or cinnamon)
1 cup pancake mix (I use Aunt Jemima Original)
Nonstick cooking spray
Directions
In a large bowl, mix the water and pumpkin pie mix. Add the pancake mix and stir until just combined. Don't over mix, the batter should be lumpy.
Let the mix stand for 1 to 2 minutes to thicken.
Spray the griddle or a large nonstick skillet with cooking spray and heat over medium-low heat. The skillet will sizzle water dropplets when ready.
Pour the batter onto the griddle or pan using 1/4 cup batter for each pancake.
Cook until bubble form on top of the pancakes and the batter is set. Use a spatula to flip the pancakes and cook until golden brown on the other side.
Top with your favorite pancake toppings!
