Cheesy Eggs, Broccoli and Crab

Introduction

Rich tasting, easy to make, yet light, breakfast. No crab available? Substitute in your favorite, cooked, breakfast meat. Rich tasting, easy to make, yet light, breakfast. No crab available? Substitute in your favorite, cooked, breakfast meat.
Number of Servings: 2

Ingredients

    Egg, fresh, 4 extra large
    Ricotta Cheese, part skim milk, .25 cup
    Milk, 2%, .25 cup
    Broccoli, cooked, 0.75 cup, chopped
    Dungeness Crab, 2.5 oz
    Romano Cheese, .75 oz

Directions

Whip eggs, Ricotta cheese, and Milk together.
Fold Crab meat and Broccoli into the egg mixture. Pour into skillet and cook until scrambled, grate Romano cheese over the top (turn off heat) and cover until melted.

Makes 2, ~2 cup servings.

Optional: Place cooked mixture into flour or whole wheat tortilla, add salsa or sriracha sauce for a great burrito to go.
