Cheesy Orzo

Number of Servings: 4

Ingredients

    1 can vegetable or chicken broth
    I cup orzo
    1/2 cup chopped onion
    1 or 2 cloves grated garlic
    1 Tbs olive oil
    1/4 cup grated Parmesan cheese
    dried or fresh parsley

Directions

Saute onion and garlic in olive oil for a few minutes. Add broth and orzo; bring to a boil and then lower heat and simmer for 20 minutes or until most of the broth is absorbed and the orzo is tender. Stir in the cheese. Add some dried or fresh parsley.
