Vegan Mayonnaise

Introduction

Low fat non-egg alternative to traditional mayonnaise. Low fat non-egg alternative to traditional mayonnaise.
Number of Servings: 20

Ingredients

    1 package (12 ounces of 340 grams) firm tofu - crumbled
    1/4 cup extra virgin olive oil
    1/4 tsp Grey Poupon Dijon Mustard
    dash of salt to taste
    3 tbsp or about 1 1/2 ounces of fresh squeezed lemon juice

Directions

Makes 20 average sized servings - recipe can be reduced or added to depending on the number of people who will be eating it. It will last in the fridge for about 7 days.

Place all the ingredients except for the olive oil in the blender and process until very smooth and creamy. Slowly add the olive oil until blended. Store in the fridge until needed.
