Veggie "Quesadillas"

Introduction

A very quick, easy veggie quesadilla -- no frying involved! This could be an appetizer, a lunch, or a dinner with a side salad. The variations are endless -- add beans, vary the veggies. Ingredients

    Whole wheat tortilla
    3-4 sun dried tomatoes in oil, sliced
    1/2 c spinach
    1 oz shredded monterey cheese

Directions

1. Mix together all ingredients except the tortillas in a bowl

2. Place cheese mixture on the tortilla, leaving a little space at the edges

3. Broil for approximately 5 minutes, until cheese is melted

4. Fold tortillas in half

5. Cut each tortilla into 3 slices
