Ingredients

1 c. Couscous
1 c. chicken broth
1/2 c. water
1 red bell pepper,
1 carrot
8 scallions
1/4 c lime juice
1 tsp EVOO,
salt
pepper
fresh parsley if desired
Directions
Bring water and broth to boil. Add couscous, salt and EVOO, covr, remove from heat and let sit for five minutes. Meanwhile finely chop pepper, scallions, and carrot. Combine veggies with couscous, lime juice, salt and pepper. Chill for 3 hours so flavors can combine.
