Number of Servings: 6

Ingredients

    1 can diced tomatoes, Italian or garlic & onion (or use plain & add garlic & basil); undrained.
    1 pkg. (6 oz) Stuffing Mix (I like using cornbread).
    1 1/2 lbs boneless skinless chicken breasts, cut into bite-sized pieces.
    1 Cup low-fat shredded Mozzarella cheese.

Directions

Preheat oven to 400F. Place chicken in 13x9in (or slightly smaller) baking dish; sprinkle with cheese. In a medium bowl place dry stuffing with tomatoes (& liquid) adding ~1/2Cup water stirring just until moistened. Spread onto cheese/chicken.
Bake 30minutes or until chicken is cooked through.

    My whole family enjoyed this. I only used half of the pkg of stuffing (to cut down on sodium), plus I added a layer of chopped fresh spinach between the layer of basil and the layer of cheese ... to add some veggie content for my kids. DELICIOUS! - 1/28/09

    I saw this in my kraft magazine and was glad to see it's already logged in here. I tried it for the first time and my husband and I really liked it. It's a healthy living recipe so that's even better. We will definitely make it again! - 1/28/09

  • I found this on the back of the stuffing box. I picked up the low sodium stuffing to use this time, and I always use 2% cheese. I enjoyed it, tasted like chicken parmagiana. Next time, I'd maybe marinate the chicken in some Italian dressing and it would be extra tasty. - 9/14/10

  • I did this with no salt added diced garlic tomatoes, lower sodium stove top stuffing and reduced fat 4 cheese italian blend. I also added a layer of spinach as someone else suggested. It's very good, but it needs a little more punch - will season more next time. - 5/15/09

  • Use whole wheat or high fiber bread and make own croutons to add fiber and cut down on sodium. Agree with others on using low sodium tomatoes and to add the fresh spinach. Great recipe to get the creative juices flowing. - 5/14/09
