my entire family loves this dish & is so easy to prepare; we usually serve with a tossed salad and/or a green veggie.

Ingredients

1 can diced tomatoes, Italian or garlic & onion (or use plain & add garlic & basil); undrained.
1 pkg. (6 oz) Stuffing Mix (I like using cornbread).
1 1/2 lbs boneless skinless chicken breasts, cut into bite-sized pieces.
1 Cup low-fat shredded Mozzarella cheese.
Directions
Preheat oven to 400F. Place chicken in 13x9in (or slightly smaller) baking dish; sprinkle with cheese. In a medium bowl place dry stuffing with tomatoes (& liquid) adding ~1/2Cup water stirring just until moistened. Spread onto cheese/chicken.
Bake 30minutes or until chicken is cooked through.
