Chinese Orange Chicken

Introduction

Number of Servings: 6

Ingredients

    1 tbs Orange Juice concentrate
    2 tbs soy sauce (low sodium)
    2 tsps chicken bouillon (low sodium)
    1-1/2 tsps cornstarch
    1/2 tsp ground ginger
    3/4 lb boneless chicken breasts, in strips
    2 cloves garlic, chopped
    1 red pepper, cut in strips
    1/2 lb fresh snow peas
    1 can (8 oz) sliced water chestnuts, drained

Directions

1. In a measuring cup (because it's easy), mix 1/2 cup water, OJ, soy sauce, bouillon, cornstarch and ginger; mix well and set aside.
2. Spray large skillet with non-stick spray. Add garlic and chicken. Cook for 6 minutes. Remove chicken from skillet.
3. In same skillet, stir fry veggies about 5 minutes until tender crisp.
4. Add chicken and water chestnuts. Stir to heat through.
5. Add bouillon mixture. Cook for 5 minutes until thickened.
6. Serve atop brown rice.
Makes 6 servings.
