1 cup rice
1 can chicken broth
1/2 package cut leaf spinach, frozen
1 T. smart balance spread lite
1 T. whole wheat flour
1 cup milk (about)
6 oz. fat free sour cream (or lite)
3/4 c. salsa
2 cans Chicken breast
1 cup 2% shredded cheddar cheese
1/4 cup 2% shredded cheddar cheese for topping
2. Melt smart balance spread in a saucepan, add flour and stir until it turns into a paste. Pour in milk slowly until it is gravy consistancy (may use more or less than 1 cup). Add sour cream, salsa, chicken, and 1 cup cheese. Mix well.
3. Once rice is cooked combine both mixtures. Mix well.
4. Pour into glass 9x13 pan. Sprinkle remaining cheese on top.
5. Bake @ 350 until cheese is melted. No more than 20 minutes.
