Baked Oatmeal

This is a nice alternative to the usual morning bowl of oatmeal. It makes a soft breakfast square. I usually eat it slightly warmed up with a bit of milk. Ingredients

3 Cups Oats
2 tsp Baking Powder
1/2 tsp cinnamon
1/2 tsp salt
1/2 Cup Sugar
1/2 Cup Applesauce, unsweetened
1 tsp Vanilla
4 egg whites
1 cup skim milk
1 cup dried cranberries, blueberries or raisins
Directions
Preheat oven to 350 degrees F. Mix the dry ingredients in one bowl. Mix the Wet ingredients in another bowl. Combine the wet and the dry ingredients and add blueberries. Spread in a 9x9 inch pan that's been sprayed with non-stick spray. Bake 20-30 min. Serve it as-is or top it with some sort of milk.
Note: One option is to leave out the sugar and sprinkle it (or artificial sweetener) on afterwards. I've left it in for the nurtitional information calculation.

This is yummy! I use brown sugar and sometimes use 1/2 cup chopped pecans instead of 1/2 cup raisins for a little crunch - have also used dates, chopped peaches, flavored applesauce, tons of potential. Yummy topped with ff vanilla yogurt. Can be prepared the night before and baked in the morning. - 4/11/07

This is great! I cut it into 12 squares, and MartiParty they are not small squares! I add plain yogurt, sometimes fruit, and this morning I put in a several tablespoons of walnuts. Raised the calories, but oh my gosh it was good! I keep the squares in the freezer & heat them in the microwave. - 2/23/13
