Introduction

This is a nice alternative to the usual morning bowl of oatmeal. It makes a soft breakfast square. I usually eat it slightly warmed up with a bit of milk. Number of Servings: 6

Ingredients

    3 Cups Oats
    2 tsp Baking Powder
    1/2 tsp cinnamon
    1/2 tsp salt
    1/2 Cup Sugar
    1/2 Cup Applesauce, unsweetened
    1 tsp Vanilla
    4 egg whites
    1 cup skim milk
    1 cup dried cranberries, blueberries or raisins

Directions

Preheat oven to 350 degrees F. Mix the dry ingredients in one bowl. Mix the Wet ingredients in another bowl. Combine the wet and the dry ingredients and add blueberries. Spread in a 9x9 inch pan that's been sprayed with non-stick spray. Bake 20-30 min. Serve it as-is or top it with some sort of milk.

Note: One option is to leave out the sugar and sprinkle it (or artificial sweetener) on afterwards. I've left it in for the nurtitional information calculation.

    This is yummy! I use brown sugar and sometimes use 1/2 cup chopped pecans instead of 1/2 cup raisins for a little crunch - have also used dates, chopped peaches, flavored applesauce, tons of potential. Yummy topped with ff vanilla yogurt. Can be prepared the night before and baked in the morning. - 4/11/07

    Baked oatmeal is always a great hit in our house. I'm not sure about the calorie count in this recipe. The math doesn't add up. When you look at the calories per ingredient, it only equals 312 calories per serving. - 3/9/11

    I took a look at the calorie count - I think perhaps the serving size should be 1/9th and not 1/6. The math works right that way - and it's convenient for a 9/x9 pan - 3/24/11

    This is great! I cut it into 12 squares, and MartiParty they are not small squares! I add plain yogurt, sometimes fruit, and this morning I put in a several tablespoons of walnuts. Raised the calories, but oh my gosh it was good! I keep the squares in the freezer & heat them in the microwave. - 2/23/13

    Yummy! Thanks! I use whole eggs (healthier) and Splenda. Top with walnuts before baking to add protein and yumminess. Make a big batch and warm leftovers in the microwave. Quick breakfast. - 10/29/12

    I am going to try this today. Instead of regular sugar will use brown sugar. And will use 1% milk. And make 8 servings out of it. Which makes it only 232 calories and 8g of protien for one piece - 4/16/11

    seriously the best quick breakfast! i made these yesterday morning and substituted 1/4c mini chocolate chips with craisins...and i also used 1/4c brown sugar and 1/4c organic sugar. SO GOOD! even better warm! - 3/31/11

    This is a great recipe. I have made a recipe like this many times in the past. Very yummy and you can use whatever flavorings you want it in...blueberries, peaches, raspberries. I usually cut mine into small pieces though. - 10/4/07

    Yikes. Sounds good but it's almost a whole days worth of carbs on my dr's diabetic diet recommendations. I may try it with Splenda and without the dried fruit. I like the idea of an oatmeal based square that I can refrigerate or freeze to have on hand. - 9/29/12
