5 cups quartered strawberries
3 cups sliced rhubarb 1/3 inch thick
1/2 cup sugar
1/4 cup cornstarch
1 teaspoon fresh lemon juice
some lemon zest
3/4 cup oats ( ground into flour)
3/4 cup oats (old-fashioned)
1/2 cup light brown sugar
4 tablespoons ( cold)Earth Balance buttery spread
In a medium bowl, combine strawberries,rhubarb,sugar, cornstarch , lemon juice and zest. Toss to coat. Pour into baking dish.
In same bowl add oat flour, oats brown sugar and salt- stir. Mix in cold butter spread with pastry blender(?) til crumbly. Spread over fruit mixture.
Bake for 30-40 minutes until golden brown.
Serve with whipped topping or ice cream for 8
