Lime Ricotta Mousse

Introduction

This can also be made substituting Greek yogurt or cottage cheese, but nutrition counts will change. This can also be made substituting Greek yogurt or cottage cheese, but nutrition counts will change.

Ingredients

    1 small package sugar-free lime jello
    3/4 boiling water
    2 cups ricotta cheese (or 1 cup ricotta and 1 cup cottage)

Directions

Makes 8 servings.

Dissolve Jello in boiling water. Stir in ricotta cheese until well-blended (I put it in the blender and blend for 1 minute). Pur mixture into 1 qt mold or bowl, and refrigerate until set.

(If you like cucumbers, this is good with 2.4 diced or grated cucumber.
