KGB Splash Out Breakfast

Ingredients

    2 slice Whole wheat bread, toasted
    2 tablespoon Mayonnaise
    2 tablespoon Oil
    1/2 small Onion, chopped
    1/2 small Green pepper, chopped
    1 clove Garlic, chopped
    1 medium Tomato, chopped, seeds & pulp removed
    2 large Egg
    salt & pepper to taste

Directions

1. Toast the bread and spread a tablespoon of mayo on each.

2. Heat the oil in a frying pan. Add onions and fry for 1 minute or so (med high heat). Add pepper and garlic. Fry for another minute or two. Add the tomato and salt and pepper, if desired. Reduce heat to medium.

3. Beat 2 eggs in a small bowl and pour over vegetables in frying pan. Allow to set on the bottom. Using an egg turner, flip egg and vegetables in large sections. Cook through.

4. Serve egg mixture on toast.

Serves 2.
