Ingredients

    1/2 cup onion -- finely diced
    1/4 cup green bell pepper -- finely diced
    2 egg whites -- beaten with whole egg
    1 large eggs -- beaten
    2 water chestnuts -- finely chopped
    2 cups bean sprouts -- drained and rinsed
    1 teaspoon soy sauce
    .







Directions

1. Drain bean sprouts and rinse. Set aside.

2. Using a large heavy non-stick skilled over medium-low heat and sprayed with vegetable oil spray, saute the onion and bell pepper until crisp tender.

3. Add water chestnuts and stir for half a minute.

4. Beat together the whole egg and egg whitestogether with the soy sauce.

5. Stir in bean sprouts and add cooked vegetables. Mix together thouroughly.

6. Spray heavy skillet with vegetable oil spray and add half the mixture. Cook over medium-low heat until lightly browned on one side and then gently turn over and cook on the other side. Repeat with second serving.
