Zuchini & Tomato Omelette

Introduction

This is a tasty breakfast that I came up with while trying to adapt a pita recipe for dinner. The ingredients I used can also be used for a wrap but needed something extra to it. This is a tasty breakfast that I came up with while trying to adapt a pita recipe for dinner. The ingredients I used can also be used for a wrap but needed something extra to it.
Number of Servings: 1

Ingredients

    1/2 Tbls Olive Oil
    1/2 tsp Minced Garlic
    1/4 tsp Basil

    1/2 Medium Zuchini
    1/2 Can of Tomato (Drained)

    3/4 Cup Egg Beaters

    Parmesan Cheese (to taste)

Directions

1. Shred the Zuchini
2. Drain the Canned Tomatoes

3. In a pan, heat the olive oil, minced garlic, and basil.
4. Once the olive oil, garlic, and basic is hot, add the zuchini and cook the zuchini in it.
5. Add the tomatoes. Keep cooking until most of the additional water in the tomatoes evaporates.

6. Remove the zuchini/tomato filling off the stove.
7. Add egg beaters to the pan. Cook them flat. Once the egg beaters are starting to get cooked, (You'll be able to tell) Add the zuchini/tomato mixture.
8. Fold the egg into an omelette. Let cook for a little while longer and then you're good to go.
