Ingredients

2 Tbls. grapeseed oil
1 small onion, chopped
1 cup diced celery
2 cups cooked brown rice
1 can pinto beans, undrained
1 can stewed tomatoes, cut up
Directions
Heat oil in large skillet or saute pan and add the onion. Cook until slightly softened, then add celery and cook another 1-2 minutes. Add brown rice and stir to coat. Add beans and tomatoes and simmer over medium-low heat for 5-10 minutes. Makes approx. 4 - 11/2 cup servings.
