Poached Salmon Steaks

Introduction

Number of Servings: 4

Ingredients

    1 1/2 cup water
    1/4 chopped onion
    2 tbsp lemon juice
    1 bay leaf
    4 fresh (or frozen, thawed) salmon steaks, 4 oz each
    1/2 cup plain, low-fat yogurt
    1/2 tsp dried dill weed
    2 tsp dijon mustard
    1/4 tsp worcestershire sauce

Directions

Preheat oven to 325.

Combine first 4 ingredients in a microwave-safe bowl or measuring cup. Microwave on high until boiling. Pour half of the mixture into a 2 quart shallow baking dish. Arrange salmon in baking dish. Pour remaining water mixture over salmon. Bake for about 15 minutes or until fish flakes easily when tested with a fork. Discard bay leaf and poaching liquid.

Combine remaining 4 ingredients in a small bowl. Serve with salmon. Serves 4.
