Introduction

Cabbage supposedly contains enzymes to help speed metabolism. I just know this is filling and low-calorie. Makes an excellent side dish. Cabbage supposedly contains enzymes to help speed metabolism. I just know this is filling and low-calorie. Makes an excellent side dish.

Ingredients

    1/2 head of cabbage, steamed
    1 can diced tomatoes
    cooked barley, about 2 cups cooked

Directions

Steam the cabbage in about an inch of water, cook the barley according to package directions. Mix together, add the tomatoes and heat through. I have added one pound of ground beef before, to make like a "stuffed" cabbage casserole. Without the meat it is much lower in calories and fat. And still very filling.
