AB's turkey piccata

Introduction

Number of Servings: 4

Ingredients

    1 package turkey breast cutlets (1 1/2 to 2 lbs)
    salt
    freshly ground black pepper
    1/2 cup whole wheat flour
    2 tbsp olive oil
    6 tbsp unsalted butter, divided
    2 tbsp finely chopped shallots
    1/2 cup white wine
    1/3 cup freshly squeezed lemon juice
    2 tbsp fresh chopped parsley

Directions

Serves 4

Spray or sprinkle turkey cutlets with water and place between two sheets of plastic wrap. Pound with a meat mallet to no less than 1/8 inches.
Season meat to taste with salt and pepper and dredge in flour and shake off excess.
In a large saute pan over medium high heat melt 4 tbsp butter (reserving 2 tbsp for the sauce) with olive oil until heated but not quite smoking. Brown turkey quickly about 1 minute per side and remove to an oven proof platter. Place in oven to keep warm.
Reduce heat to low and add the shallots to the pan. Saute for 1-2 minutes or until they begin to turn translucent. Add wine and lemon juice and simmer until slightly reduced, 2 minutes. Add butter and whisk to combine. Season with salt and pepper to taste, if necessary. Pour sauce over turkey, sprinkle with parsley and serve immediately.
