Curried Tuna & Rice Salad

Ingredients

- 4 cups (750 mL) hot, cooked rice (I use brown)
- 1/2 cup (125 mL) frozen peas
- two 6-oz (170-g) cans tuna, drained and flaked
- 3/4 cup (175 mL) chopped celery
- 1/4 cup (50 mL) sliced green onions
- 1 tbsp (15 mL) drained capers, optional (I've never used these)
- 1/4 cup (50 mL) white vinegar
- 2 tbsp (30 mL) olive oil
- 2 tsp curry powder
- 1 tsp (1 mL) hot pepper sauce
Tips
Directions
In large bowl, combine hot rice and peas; toss lightly. Add tuna, celery, onions and capers (if using). In small bowl, whisk together vinegar, oil, curry powder and hot pepper sauce. Pour over rice mixture; toss lightly. Cover and chill 30 minutes.
