Ingredients

1 1/2 cup chicken breasts (no skin, chopped)
1/2 can Dole pineapple chunks (save some of the syrup)
    1/2 green pepper
    1/2 tomato
    1/2 onion
    1 cup water
    salt, to taste
    black pepper, to taste
    1 tsp soy sauce

Directions

1. Season chicken as you'd like (salt, soy sauce, sugar, black pepper)
2. On the stove, put a frying pan to heat. Add butter. Add chicken.
3. Let the chicken brown for about 3 minutes, then cover and let simmer for about 2 minutes.
4. Put chicken and juice aside.
5. In sauce pan, add 1/4 cup of water, green pepper, tomato, onion, a pinch of salt. Cover, let simmer for about 3 minutes.
6. Add pineapple chunks and syrup. Cover, let simmer for about 2 minutes.
7. Add chicken, add more water. Cover, let simmer for about 5 minutes.

Serve with your choice. I usually eat it with rice & peas, with a side of lettuce and tomato.

Enjoy.
