Introduction

Great for making a meal out of left over chicken, quick and easy, even the older kids can fix these for themselves after school. Great for making a meal out of left over chicken, quick and easy, even the older kids can fix these for themselves after school.

Ingredients

    Whole wheat Flour Tortilla
    shredded cooked chicken breast
    Reduced fat cheddar or jack cheese
    salsa

Directions

heat a dry non-stick skillet on the stove top to med. While it's heating,on your plate start with a tortilla. Sprinkle cheese down the center of the tortilla, add some cooked chicken breast and a spoon of salsa. Roll the tortilla so all of the ingredients are wrapped up inside. Place tortilla in skillet and place a smaller pot or skillet on top (to keep the tortilla from unrolling) After a few mins check for browning and flip the tortilla over. Repeat until cheese has melted and chicken is warmed thru. If you like you can add some rice that you have left over as well! These are so much better than the ones at Taco Bell and you can use left over beef or pork also. Serve these with a tossed salad and a fruit cup for dessert, YUMMY!
