Veggie Fritatta



Introduction

Low in calories and loaded with veggies, this is a great way to start your day. Low in calories and loaded with veggies, this is a great way to start your day.
Number of Servings: 6

Ingredients

    2 cups Egg Beaters
    1/2 cup low fat cottage cheese
    1/2 cup low fat shredded cheddar
    1 large tomato
    1 ten oz. package frozen broccoli
    6 slices canadian bacon
    1 tsp minced garlic
    Salt and pepper to taste

Directions

Microwave the frozen broccoli to defrost.

Wash and dice your tomato, discarding seeds and stem.

Dice the canadian bacon.

Combine all ingredients in a mixing bowl. Pour into a (sprayed with Pam) round baking dish. This dish will puff up as it bakes, so be sure it has room to grow.

Bake at 350* F for 60 minutes. Makes 6 servings.

(Note: I like to make one of these on Sunday evenings, and my family eats a slice for breakfast early in the week.)


You can experiment with different vegetables. Spinach and tomato is another popular combination in our house.
