Introduction

I love this for breakfast, lunch or dinner. I usually serve the onelete on toasted english muffin. I love this for breakfast, lunch or dinner. I usually serve the onelete on toasted english muffin.

Ingredients

    2 cups onion chopped
    2 cups bell peppers chopped ( I like red or orange)
    2 cups mushrooms
    1/2 cup egg substiture
    2 tablespoons salsa

Directions

Heat a large saute pan, spray with vegetable spray and cook vegetables until almost carmelized. Stir in egg substitute and salsa. Cook until eggs are set. Salt and Pepper to taste.
