Summer Salad for One

Introduction

As the weather heats up, this is a good cool meal for one with very little prep required. As the weather heats up, this is a good cool meal for one with very little prep required.
Number of Servings: 1

Ingredients

    1 cup fresh spinach
    1 cup diced cantaloupe
    1 cup diced strawberries
    .5 cup chickpeas
    2 tbsp Parmesan cheese (grated or shaved)
    2 tbsp vinaigrette dressing

Directions

Place fresh spinach in bowl.

Dice cantaloupe and strawberries into bite-size pieces and add on top of spinach.

Drain a can of chickpeas and add about 0.5 cup to the salad.

Sprinkle about two tablespoons of grated or shaved Parmesan cheese on top.

Top with your favorite vinaigrette dressing (I use Ken's Raspberry Pomegranate).

Other great fruits on this include blueberries, raspberries, mandarin oranges, and pineapple.
