IntroductionThis is one of my favourite dinners - quick, wholesome and vegetarian. Easy to scale up for if you're feeding more than one person, too!
Serves one. This is one of my favourite dinners - quick, wholesome and vegetarian. Easy to scale up for if you're feeding more than one person, too!
1 tbsp olive oil
1 courgette, grated
2 cloves of garlic, finely chopped
1 tsp chili powder or chili flakes (or less if you don't like it so spicy)
2 tbsps grated Parmesan
200g cooked pasta
salt and pepper, to taste
All this can be done while you cook the pasta. Nice and easy!
Pour the olive oil into a frying pan and heat gently. Add the garlic and fry for a minute or two on its own. Then add the courgette and chilli. Cook gently for five minutes or so - till it starts to soften. Then turn down the heat and add the Parmesan, and stir for a moment while the cheese melts into the courgette. Season to taste, and serve with freshly cooked pasta.
