Introduction

delish! Best fried potato method I've ever tried. delish! Best fried potato method I've ever tried.
Number of Servings: 1

Ingredients

    1.5 tbsp Olive Oil (divided)
    2 tbsp chopped red onion
    2 cloves garlic
    1 medium to large potato, baked (I do mine in the microwave)
    salt & pepper to taste
    1/4 cup shredded cheese

Directions

wash the potato and put it in the microwave to bake.
chop the onion and garlic and put in a small skillet or saute pan with about 1/2 tbsp of Olive Oil.
once the potato has finished and the onion is softened, chop up the potato into cubes and add it to the pan. Drizzle with remaining Olive Oil as you stir it all up together. Sprinkle with salt and pepper.

Top with shredded cheese
