Rhubarb Bread

This bread is not overly sweet but very tasty.

Number of Servings: 10

Ingredients

    2 1/2 C flour
    2 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1 tsp powdered ginger OR 1 tbsp grated ginger
    egg replacer to equal 1 egg
    1/2 cup granulated sugar
    1/2 C oil
    1/2 C orange or apple juice
    1 1/2 C rhubarb, finely chopped
    3/4 C nuts, chopped

Directions

Preheat oven to 350 F. In a large bowl, sift together the flour, baking powder, baking soda, salt, and ginger. Stir in the egg replacer, sweetener, oil, juice, rhubarb, and nuts. Mix together gently until "just mixed." Spoon into a lightly oiled loaf pan and bake for 35-40 minutes. Test with a knife to see if done. Cool for 10 minutes before slicing and serving. Makes 1 loaf.

*I made some changes when I baked this. I didn't have orange or apple juice so I used applesauce instead, I also replaced the oil with applesauce and added 1 Tbsp of oil. 40 minutes was not long enough and I ended up baking an additional 35 minutes. I also used more rhubarb and nuts. :)
