Stuffed Orange Roughy

Ingredients

    2 Orange Roughy Filets (sole, bass or snapper would also work)
    1 C diced celery
    1/4 C raw chopped onion
    1 T mayonnaise
    1 slice stale whole wheat bread, cut in small cubes
    Salt, pepper, to taste
    Paprika
    Optional: Tabasco or Worcestershire Sauce



Directions

Trim about 25% of the thin bits off the filets, so they are of even thickness.
Finely chop the trimmings & place in a medium bowl with the onion, celery, and bread cubes. Stir in mayonnaise, salt, pepper (& worcestershire and/or Tabasco, if desired)
Season the filets with salt & pepper & place in a small baking dish. Spoon stuffing mixture on top of filets & sprinkle with paprika.
Bake at 375 until brown on top & flaky.
