Introduction

Quick and easy bean salad, full of fiber, color and flavor. Quick and easy bean salad, full of fiber, color and flavor.
Number of Servings: 9

Ingredients

    1 can black bean, drained
    1 can red kidney beans, drained
    1 can mexicorn
    2 medium scallions chopped
    3 Tbs Canola Oil
    3 Tbs Cider Vinegar
    1 Tbs garlic powder
    1/2 tsp gound cumin
    dash pepper and salt

Directions

Drain and rinse the beans, combine in bowl with mexicorn (do not drain). Wash and chop scallions and add to beans. Combine oil and vinegar with the spices. Pour over bean mixture. Chill before serving.
