Easy Beansy Chili

Ingredients

    1 16oz can of pinto beans, 1 16oz can of kidney beans, 1 16 oz can of diced tomatoes, 1 4oz can of green chilies (diced), 1 medium onion, 3 to 5 cloves of garlic, 1 box of low sodium beef, chicken of veg stock, chili powder, onion powder, fresh ground black pepper.

Directions

Drain and toss into a slow cooker 1 can of pinto beans, 1 can of kidney beans. Add undrained 1 small can of green chilies and 1 16oz can of diced tomatoes. Chop and add one medium onion and 3 crushed cloves of garlic. Add beef stock to barely cover the beans and tomatoes. Let it cook on high for about 2 hours to let the onions get soft and the seasonings to penetrate the beans.

*You may want more or less seasonings depending on your taste. Veg and chicken stock is also good for this recipe.
