Ingredients

4.5 lb Beef Pot Roast
1 tsp salt
1 tsp garlic
1 tsp rosemary
Your favorite spices!
Directions
Preheat oven to 450 F. Season roast with salt, garlic, rosemary & favorite spices. Cook roast in oven for 30 min. Reduce heat to 350 F and continue to cook for 90 min (20 min / lb) Remove roast from oven and wrap tightly in tinfoil (shiny side facing meat) Place wrapped roast on a plate on the counter for 30 min. (The roast continues to cook in it's own juices while on the counter top) Enjoy!!!

THIS RECIPE ROCKS! And I am a usually a harsh critic! I have been trying to cook a moist roast beef for years without success. This technique TRULY makes this roast beef moist. The only change I made to the recipe was to double the spice measure - but that's merely a personal taste preference. - 11/2/11
