Laura's Beef Stew

Number of Servings: 20

Ingredients

    1 pound cubed beef (flank steak)
    6 medium potatoes cubed
    1 small turnip cubed
    2 leeks sliced in larger chunks
    2 medium onions cubed
    6 carrots cubed
    4 medium sized stalk celery cut in chunks
    1 cup raw pearled barley
    30 oz. sodium reduced beef broth
    3 cups water
    1 tbsp. basil
    1 tsp. pepper or to taste
    1/2 cup flour to coat meat
    2 tbsp olive oil

Directions

Makes 20 1-cup servings. In Olive Oil brown the cubed meat that has been coated lightly with flour. When browned add 3 cups water and 2 and 1/2 cartons of sodium reduced beef broth. Add remaining ingredients and cook until vegetables are tender.
