Crock Pot Chicken Parmesean

Ingredients

1.5 lbs boneless, skinless chickent breast
28 oz can crushed tomatoes
2 cloves of garlic, minced
1 4oz can sliced black olives (optional)
4 oz sliced mushrooms (optional)
2 tsp oregano
2 tsp basil
1 tsp thyme
6 oz mozzarella cheese
Directions
-Cut chicken breasts into 4 oz serving size and place in crock pot.
-In a bowl, mix the tomatoes, olives, mushrooms, garlic and spices. Pour over chicken and spread evenly. Push down while spreading to ensure the sauce flows around the chicken.
-Set crock pot to low and cook 8 - 10 hours.
-5 minutes before serving, place 1 ounce of mozzarella on each pice of chiken and allow to melt.
-Serve with whole wheat pasta, if desired (add about 200 calories for the pasta)

This dinner smelled wonderful cooking, but was deemed a "do not make again" recipe by the whole family. The recipe lacked flavor, chicken was dry and it tasted nothing like chicken parm. I hate being the one that disagrees, but I don't understand how this recipe is getting such great reviews.. - 5/13/11

My family really liked this! I cut down on the oregano to one tsp and may even go to a half next time. I just don't like strong oregano. I also added and extra garlic clove and a half a tsp of celery salt. Probably would be good to add some red wine too but I was trying to keep it low carb. - 9/23/11
