Introduction

Low in fat because it doesn't use mayonnaise! Low in fat because it doesn't use mayonnaise!

Ingredients

    • 2 cups green cabbage, shredded
    • 2 cups red cabbage, shredded
    • 1/2 cup jicama peeled and sliced into 1/4 inch strips
    • 1 green pepper, seeded and chopped
    • 1 medium carrot, peeled and shredded
    • 1 medium onion, chopped
    • 1/2 cup medium radishes, chopped
    Ingredients for the dressing:
    • 3 tablespoons packed brown sugar
    • 3 tablespoons water
    • 1 1/2 tablespoons lemon juice
    • 1 tablespoon olive oil
    • 1/4 teaspoon salt
    • 1 clove garlic, chopped

Directions

1. In a small bowl, combine ingredients for dressing. Mix well.



2. Toss with cabbage mixture in a large bowl and chill for 2 hours before serving.



Serves 6.

    I used a bag of slaw mix from Publix. A small sprinle of Celery salt. Left out the salt and the peppers, radishes, and jicama . Grined some fresh black pepper in it as well. My hubbie is very picky about his slaw, and he liked this!
    AND I can eat it too!!!

  • Really enjoyed this slaw. I used my food processor and chopped the veggies small like KFC. I also omitted the jimcama and added a small apple. I also added a few jalapeno slices finely chopped because Iike a kicks in my slaw... - 12/7/11
