Fresh Easy Zucchini Barley Soup

Introduction

I made this recipe up a couple years ago, it is great in the summer when zucchini is in season. I made this recipe up a couple years ago, it is great in the summer when zucchini is in season.
Number of Servings: 8

Ingredients

    Summer Squash, 4 cups, sliced
    Zucchini, 4 cups, sliced
    Onions, raw, 2 cups, chopped
    Chicken Broth, 2 cans (10.75 oz)
    Barley, pearled, raw, 1 cup
    Celery, raw, 2 cups, diced
    Pepper, black, 2 tbsp
    Salt, dash

Directions

Place all ingredients in a big pot on stove. Bring to simmer, cook until the barley is ready and the zucchini is soft, about 15-20 minutes. Water can be added if the soup is too thick with veggies for your taste.
